I just got to thinking about these again since I posted. I'd like to substitute the american cheese for nacho cheese...hehehehe maybe throw some jalapenos and diced onion in there for good measure. I started to salivate just thinking about that

Would be a gravy boat type plate with 2 biscuits with gravy, on top of that would be hash browns, then cheese and then 2 eggs on top of that.
